Our mushrooms come to us fully packaging free, in tupperware! Ground shiitake mushrooms. Ingredients: shiitake mushrooms.

Our fresh & dried wild mushrooms are foraged by hand from forests and coastlines in Scotland by a team of foragers. Mushrooms are picked and delicately packed manually to preserve their freshness and quality.

White pepper is created by removing the pepper fruit's dark outer skin and flesh (normally kept on for black pepper) leaving behind the seed of the peppercorn. This white pepper seed is then ground, ready for use. White pepper has a less complex and less fruity flavour than black pepper, as some of the hot piperine compound is removed with the outer skin, giving a musty and earthy taste. 

It is often used when you don't want the visible black flecks of black pepper, but still require a peppery bite, such as white sauces, mashed potato, or creamy soups. However, it loses its potency faster than black pepper over time, so it is better to keep a smaller stock and refresh regularly. 

Top tip: Add after the dish has been cooked, as overheating it can release a bitter flavour

Native to the Mediterranean, Marjoram has a sweet delicate flavour - in moderation. The high tannin content can taste bitter if overused! It can be added to any combination of vegetables, grains and beans. Combines particularly well with tomato or nut dishes; also used in dressings and sauces.

Grown world-wide, this common garden mint is used in sauces, drinks; with potatoes, peas, other grains and vegetables. It's often used as garnish, and in many Middle Eastern dishes (eg Tabouleh). Very good as a 'tonic' tea.

Nigella seeds are small, black, drop-shaped seeds with a distinctive aroma and a flavour reminiscent of onion, oregano, and black pepper, with hints of nuttiness. Widely used in Indian, Middle Eastern, and North African cuisines, they add crunch and depth to breads, pastries, curries, soups, and stews.

Perfect for spiced vegetable dishes, pilafs, and garnishing naan, these versatile seeds also shine in homemade crackers, pancakes, and salads. Sprinkle them on yoghurt, eggs, or freshly baked bread for an extra layer of flavour and texture.

Nutritional yeast, also known as ‘nooch’,  comes from a species of yeast known as Saccharomyces cerevisiae. Nutritional yeast is similar to the yeast that people use in baking, but it undergoes a heating and drying process that renders it inactive.

Nutritional yeast is dairy-free and usually gluten-free. As a result, it can be a useful supplement for people with food allergies or sensitivities, as well as those on restricted diets. It is also low in fat and contains no sugar or soy.

Our nutritional yeast is fortified in vitamin B12, which is particularly important for those on a vegetarian or vegan diet where this vitamin is only found in animal products. 

It can be added to recipes to make a ‘cheese’ sauce, or stirred into mash potato. Why not also try adding it on top of baked beans? Yum!
