Roaster’s Notes
We’ve roasted this coffee to a medium level to enhance its vibrant malic acidity, reminiscent of ripe blackberries. The body is smooth and creamy, with a high level of sweetness that lingers like vanilla syrup. A rich dark chocolate finish rounds out the flavour, making this coffee both bold and refined.
About the Montero Family & Tematica Lot
Carlos Montero and his family have been pioneers in the Micro Mill Revolution in Tarrazú, Costa Rica. A lifelong coffee farmer, Carlos built the Don Eli wet mill in 2014, enabling him to process his own coffee and connect more directly with roasters. His passion for quality and sustainability has encouraged many other farmers in the region to do the same.
The Tematica farm embodies Carlos’ vision of sustainable agriculture and knowledge-sharing. Situated across the Pirrís River from his home, the land has remained largely undisturbed, with coffee plants growing naturally among the existing forest. Some of these trees are nearly 100 years old, still thriving under the shaded canopy. Unlike conventional farms, Tematica has never used synthetic inputs—only natural materials sourced from the land itself.
The Anaerobic Natural Process
Carlos’ son, Jacob, has perfected their fermentation techniques over the years. After harvesting, the coffee cherries undergo a five-day anaerobic fermentation in sealed grain pro bags, where they are carefully monitored and rotated. Once fermentation is complete, the beans dry slowly in their fruit on raised beds for over a month, ensuring a clean, complex, and intensely fruity cup.
The result? A deeply expressive coffee with bold berry notes, a creamy mouthfeel, and a lingering dark chocolate finish—crafted with passion, tradition, and a commitment to sustainability.
