Asafoetida is the dried latex exuded from the rhizome or tap root of several species of Ferula, perennial herbs of the carrot family. In Ayurvedic medicine, hing is used to aid digestion and gas, as well as treat bronchitis and kidney stones. It is a common ingredient in Indian cuisine and cooking.
