Aunty Vin's breakfast granola (written March 29, 2019)
Just like the energy balls last week, this granola is so versatile and so many of the ingredients can be easily substituted.
Why granola this week? Well, first of all we have had so many requests for granola! So we thought why not make it ourselves? But also, because it is so versatile. It is good for:
- mixing in with yoghurt (that's what I'm having for breakfast today)
- having on it's own in a bowl mixed with orange juice (weird, I know, but blame my uncle!)
- making your own cereal bars (you could add a little more honey & maybe some peanut butter for extra stickiness & flavour)
- topping baked fruit, like baked apples
- adding into muffins & cakes
- adding into oatmeal
- adding into smoothies
- even topping salads?! Weird right, but it works!
Having recently tasted my aunt's granola, I decided to get her to send across her tricks, but of course she doesn't use a recipe... So she has created a rough guide, which you can change as you please.
Without further ado:
Vin's breakfast granola
You many know her from Winchester Vegan Fair as the lady with the glitter eyes!
Ingredients:
- 200g oats [jumbo: 32p]
- 100g mixed seeds [linseed, pumpkin, sesame & sunflower: approx 31p]
- 100g crushed nuts [almonds: £1.50]
- 100g dried fruit [cranberries & raisins: 66p]
- 2 tsp cinnamon
- 100g coconut oil
- 2 tbsp honey
Approximate cost: £2.79
[Assuming you already have cinnamon, coconut oil & honey at home]
Method:
1. Melt the coconut oil & honey together
2. Add dry ingredients & cook at 180C for 12-15 minutes (turn halfway through)
3. Leave to completely cool down
4. Break into chunks & store in an airtight container
